My 7 Favorite Instant Pot Meals

I am totally obsessed with my Instant Pot. I’ve always been a fan of the one-pot meals, but this pressure cooker takes it to a whole new level. I find the instant pot the easiest way to make full meals. But it’s also a great way to make rice, hard-boiled eggs, and pretty much anything else you could imagine.

I use it an average of about three times a week but quite honestly could use it every night and never run out of things to make. So I decided to compile my 7 favorite recipes, one for each night!


Ground Beef Pasta

This recipe quickly got upgraded to our go-to weeknight dinner as soon as we tried it. It’s my most frequently used Instant Pot recipe. The trick is that you cook the pasta right in the sauce/wine/broth which up-levels the taste so much. No water or draining necessary. I love to pair this with a simple salad – arugula and balsamic/olive oil is just perfect and serve with a fresh crack of pepper.

Dirty Rice Casserole

This casserole is a super easy one-pot meal with the rice, meat, and veggies all perfectly cooking together. I’ve made it with just chicken or sausage but it’s really great with both. I love this Cajun seasoning for all my creole cooking.

Honey Garlic Pork

This recipe is so simple and it’s not hard to switch up the ingredients a bit if you have a different veggie on hand. I like to pair it with a side of potstickers or egg rolls. I have my eye on the Instant Pot Air Fryer Lid specifically so I can make delicious apps to go with meals like this.

Indian Khema

I love this recipe and it is a great way to add unique flavor to my week. Urvashi Pitre’s website is a great resource for all kinds of delicious Indian recipes or you can go a step further and get her Indian Instant Pot Cookbook! If you have the time, make your own naan too! I love this recipe.

Pressure Cooker White Chicken Chili

This fabulous one-pot meal is the perfect winter meal. I like to use dried beans so that involves a soak overnight (which I do right in the pot), but the recipe itself is super quick and easy and you could easily use canned beans to speed things up.

Red Beans & Rice

I love the consistency of the beans in this recipe, tastes just like New Orleans! Similarly, to the white bean chili above, I like to soak beans overnight and love to use the traditional Camellia brand beans. I can usually find these locally in the south but otherwise order on Amazon. The only sad thing is that I really need a second Instant Pot so I can make rice in one and the red beans in another. Maybe I’ll get a different size so I can use two at once or for different recipes 🙂

Whole Chicken

A few months ago, I wrote a post about all the great ways to use a rotisserie chicken and the Instant Pot is by far my favorite way to make a whole chicken and of course bone broth! I love this recipe for a Sunday afternoon when I have a bit of time (it’s 6 mins per-pound plus time to depressurize, clean, and start the broth). It makes delicious chicken and broth that can be used throughout the week for quick and easy meals.
