Banana Oatmeal Lactation Muffins

Things I didn’t know were a thing before becoming a mother: lactation cookies, lactation breads, and lactation muffins! Who knew a whole new world of baked goods was going to open up when I had a baby! My husband and I have been trying out a few different recipes for all of the above utilizing some common galactagogues to promote breast milk production. So far I’ve been pretty lucky with my supply, but I like to think that some of this baking, as well as the other meals ([1], [2], [3]) and foods I’ve been eating in line with promoting lactation, are contributing to that. On the other hand, it might all be for nought, but it has certainly expanded my baking horizons!

I adapted the recipe from this one on Tasty. It says that it should yield 12 muffins; I made a 1.5x batch, and it ended up making 36… not sure if that’s because I didn’t fill my cups quite as much, because of the extra ingredients, or what! On the upside, they freeze well, so you can make a big batch and then space out defrosting them to keep up the supply!

I added brewer’s yeast, flaxseed meal, and chia seeds to the original recipe, all of which are recommended for breastfeeding moms. I love having all of these in my pantry to throw into oatmeal in the mornings, or to add to other baked good recipes. Any little bit I can feel like I’m helping to feed Baby Ernie is a plus!

INGREDIENTS

  • 3 bananas
  • 3 eggs
  • 1/2 cup maple syrup
  • 3/8 teaspoon salt
  • 3 teaspoons baking powder
  • 3 teaspoons vanilla extract
  • 2  tablespoons cinnamon
  • 1 1/2 cup greek yogurt
  • 4 1/2 cups oats
  • 1 1/2 cup whole milk
  • 3 tablespoons chia seeds
  • 3 tablespoons brewer’s yeast
  • 3 tablespoons flaxseed meal
  • topping of your choice, as desired (blueberries, walnuts, chocolate chips, raisins)

INSTRUCTIONS

Preheat oven to 350˚F.

In a mixing bowl combine bananas, eggs, maple syrup, salt, baking powder, vanilla extract, cinnamon, and yogurt.

Add oats and stir, then add milk, chia seeds, brewer’s yeast, and flaxseed meal. Let the mixture sit for a few minutes, so the oats soak up the liquid and the consistency is like oatmeal. This took 5-10 minutes to “set,” but then mixture continued to soak up while the first batches were baking.

Line muffin tins with muffin liners, then pour the mixture into each muffin cup about 3/5 full. Add toppings and push into each muffin cup. I did blueberries for this batch (except for the last 5 when I ran out, I added a few chopped up walnuts), but I think some other great options could be: raisins, chocolate chips, chopped up apples, dried cranberries, or M&Ms.

Bake for 35-40 minutes.
