We both LOVE oatmeal and have been known to have lengthy discussions about all of the different toppings and combinations we’ve tried. That being said, we each have our own go-to recipe that we just can’t stop going back to.
Laura’s makes breakfast at home and makes the same delicious savory combination each day. Stella heats up hers in the microwave at work and oatmeal is one of the only times that she goes for the slightly sweet flavors.
And for a bonus, we’ve also included our mother’s favorite recipes – these are the oatmeal recipes we love to have when we travel home!
Laura’s Savory Oatmeal with Turkey, Avocado, and an Over Easy Egg:
- My go-to oats are Quaker’s Old Fashioned. I do between 1/4 and 1/3 cup of oats with the same measurement of water in the microwave for 4-7 minutes. I usually add some chia seeds, too.
- While the oats are oating, I fry up some lunch meat (usually deli turkey, but sometimes we have leftover rotisserie chicken that gets thrown in!) and an egg or two.
- When the oatmeal is ready, I dice up half an avocado over the bowl. Add the turkey and egg, then top with your hot sauce of choice, and you’re ready for some deliciousness! Pairs well with coffee and juice.
Stella’s Slightly Sweet Mango-Walnut Recipe
- This has been my go to recipe for a few years now. It’s easy to make in the microwave and I love that it’s healthy and keeps me full through the morning.
- I usually use the frozen mango chunks from Trader Joe’s – it is so much easier than cutting up a fresh one.
- I start by microwaving the mango chunks in a little water for 30 seconds and then add the oats and a little more water. Once fully cooked I top it with walnut pieces, chia seeds and hemp seeds. I don’t love sweets so usually just the mango is enough sweetness but it’s good with a touch of brown sugar too!
Laura’s Mom’s “Everything but the Kitchen Sink” Recipe:
- This breakfast came to life out of inspiration from GORP. GORP in my house was a mix of the requisite peanuts and raisins, but also cereal, nuts, chocolate chips, gummy bears, crackers, and anything else we could find in the kitchen cabinets.
- Starting with an oatmeal base, my favorite way to top this (if it’s all in the pantry that day!) is with a spoonful of peanut butter, a squirt of honey, raisins, dried cranberries, a sliced up banana, walnuts, chia seeds, and a sprinkle of mini chocolate chips!
Stella’s Mom’s Power Oatmeal
- My mother always makes oatmeal on the stove top and it is so much better!
- She mixes in jumbo raisins and then sets up a toppings bar for us to choose from. There are always an array of healthy nuts and dried fruit plus maple syrup for a touch of sweetness.
- The star of the toppings is a delicious combo of pumpkin and sunflower seeds that she toasts in a cast iron skillet so they are fresh and crunchy!
